
Stir Fried Zucchini with Eggs
Cut the zucchini on the diagonal. Wash and drain. Leave aside.
Heat up a pan/wok at the highest heat level. Heat up 1 Tbsp of the olive oil in the pan. Add the chopped garlic and stir fry until aromatic.
Add the zucchini and stir fry until it starts cooking (when the zucchini begins to change colour from white to transparent). When cooking add soy sauce, oyster sauce and seasoning sauce. Stir well.
Make a room in the middle of the pan by pushing the zucchini aside.
Add 2 Tbsp of the olive oil in the middle of the pan.
You can add 1-2 Tbsp olive oil more than the recipe and/or reduce the heat to medium level if the zucchini or eggs start to stick on the pan.
Break the eggs over the heated oil. Break the egg yolks lightly. Let the eggs cook for 30 seconds before stir fly with zucchini.
Lightly broken egg yolks will make the dish look better when served.
Stir fry until the eggs are cooked completely. Remove from the heat. Transfer to a serving plate. Serve when hot.
This dish should not have sauce or liquid left on the pan when done.
