Steamed Chinese Dim Sum Bun Dough

 280 g lukewarm water (or skimmed milk)
 15 g fresh active yeast
 ½ tbsp baking powder
 60 g sugar
 500 g flour (UFM's Red Lotus Wheat Flour)
 50 g vegetable oil
 ¼ tsp salt

Dissolve yeast with lukewarm water in a mixing bowl. Add sugar, salt, baking powder and stir to dissolve. Add flour and vegetable oil and knead dough until smooth and elastic.

Divide the dough into 30 pieces, roll into ball-shape, and place on a lightly floured surface. Cover the dough with a sheet of plastic wrap. Let rise at least 10 minutes, or until it has doubled the size.

After the dough has risen, flatten each piece with the palm of the hand to form a thin circle. The center of the circle should be thicker than the edge.

Place one portion of the filling of your choice in the center of each dough circle. Wrap the dough to enclose the filling. Pinch edges to form the bun. Let the buns stand for 45-60 minutes.

Steam buns at maximum heat for 10 minutes. Do not open the lit while steaming. Be careful the water does not drop on the buns when open the lit.

Serve while hot.
