Roasted Minced Pork on Red Cabbage

 500 g minced pork
 3 garlic cloves
 2 tbsp sugar
 2 tsp seasoning sauce
 2 tbsp soy sauce
 3 tbsp oyster sauce
 1 tbsp sesame oil
 1 medium-size red cabbage
 a bunch of fresh coriander
Prepare cabbage trays

First remove any brown or wilted leaves on the very outside of the cabbage. Wash and clean the cabbage.
Then cut the cabbage in half, right through the stem. Cut the “half” in half again.
This is now 1/4 of the head of cabbage. Place the flat side of the cabbage down and cut the core out.
Split each piece into 3 parts: inner, middle and outer parts.
Lay the middle and outer parts on a baking tray covered with a baking sheet.
Shred and chop the inner parts. Leave aside.

Prepare filling

Mix minced pork and chopped cabbage in a big bowl.
Wash and clean the bunch of coriander. Pick all the coriander leaves and leave aside. Chop the remaining part and put in a mortar. Add the peeled garlic cloves and sugar to the mortar. Pound until all the ingredient become a paste. Add the paste to the big bowl.
Add soy sauce, oyster sauce, seasoning sauce and sesame oil to the bowl. Mix well. Marinate for 30 minutes.

Cooking

Preheat oven at 200 degree Celsius.
Stuff the filling into the cabbage trays. Bring to the oven. Roast for 10 minutes. Reduce the temperature to 180 degree Celsius. Roast for another 20 minutes. Remove from the oven. Leave it to cool down for a few minutes. Serve in a plate and garnish each piece with a few coriander leaves.
