
Chocolate Cookies
Place sugar, vanilla sugar, baking powder and cacao in a bowl. Mix well. Leave aside.
Place white flour in a large bowl. Take a few cubes of butter at a time rub into the white flour. Keep rubbing until the mixture resembles a dough.
Mix the sugar mixture into the large dough.
Beat the egg and pour over the dough. Mix well.
Knead the dough evenly until it becomes soft and smooth.
Divide the dough into 6 portions.
Roll each portion into a rod shaped.
Place a baking sheet over a baking tray.
Place the rod shaped dough on the baking sheet. Gently press to flatten the dough slightly.
Brush each portion with the beaten eggs. Sprinkle it with the coarse sugar.
Put the baking tray in the second rack from the top of the oven. Bake at 200 degree Celsius for 12 minutes.
Remove from the oven and cut lengthwise into 3/4 inch or 1 inch slices.
Transfer the cookies to a wire cooking rack to finish the cooling.
Keep the cookies in a tin box and store in a dry place.
